Seaweed and Cherry Tomatoes Salad

When I tried this salad made of seaweed and cherry tomatoes with some red onions once at the Asian restaurant, I was very impressed by its taste. Besides, I wanted to incorporate this product into my diet because seaweed is widely known for its health benefits as an excellent source of micronutrients including iodine, folate, calcium, magnesium, zinc, iron, and selenium. So, tried to replicate the salad with available ingredients at home. The taste of the salad came up very similar to the original and very delicious.  I can eat it every day 🙂 I would like to share with you my variation of the recipe. Try it as it is or experiment with other ingredients to create your own version.

 

Ingredients:

  • 1 cup dried seaweed
  • 3 cups cold water
  • 1/2 medium red onion
  • 3 Tbsp soy sauce
  • 1 cup cherry tomatoes
  • 3 Tbsp olive oil

 

Cooking Directions:

  1. Soak dried seaweed in cold water for about 5-6 minutes. I use the Fueru Wakame Dried Seaweed. Then let it drain well using a strainer.
  2. Peel a red onion. I use only a half of the onion in this recipe. Slice it thin lengthwise. Then crush it a little bit with your fingers to make it softer. Place the onion into a large bowl, add soy sauce and marinade for 10-15 minutes in a refrigerator.
  3. Wash cherry tomatoes, pat them dry with paper towels and cut into halves.
  4. Add the drained seaweed and tomatoes to the bowl with onion. Add olive oil and toss all together. I also tried this salad with sesame seed oil, but like olive oil better.
  5. Put the salad in a refrigerator for 1 hour to marinade and enhance flavors.

Serve for a lunch or dinner. It is good as an independent dish or as a side with seafood or fish.
