Bacon Wrapped Chicken Skewers

Bacon Wrapped Chicken Skewers is everyone’s favorite dish in our family. Tender, juicy, bacon flavored chicken breast pieces – what could be better! It’s not a dish which I would cook every day but just for a special occasion: a birthday celebration, holiday dinner with family and friends. This dish really makes the dinner special. Try my recipe.  It’s not complex to make, just takes some time but I’m sure you will be impressed with the result!

 

Ingredients:

  • 3 lbs boneless skinless chicken breasts
  • 2 medium yellow onions
  • 2 Tbsp mayonnaise
  • 1/2 Tbsp salt
  • 1 tsp freshly ground black pepper
  • 1 lb thin sliced bacon

You will also need wooden skewers.

 

Cooking Directions:

  1. Wash and pat dry chicken breasts with paper towels. Cut them into 2-inch pieces trying to make them equal in weight.
  2. Peel onions and cut them into eight pieces – so, first cut into four pieces lengthwise, then each piece in a half crosswise.
  3. Place chicken and onion into a large pot, add mayonnaise, salt, and freshly ground pepper.
  1. Mix well with your hands. Cover with a lid and let it marinade in a fridge for at least three hours, or better overnight.
  2. Cut each bacon slice in a  half crosswise and wrap each chicken piece in bacon.
  3. Build skewers alternating onion pieces and wrapped chicken pieces. Put 3-4 chicken pieces onto each skewer. Make sure to secure both bacon ends around a chicken piece by a skewer.
  4. I use the Electric Turbo Convection Oven to cook skewers. I found it very convenient for this type of dish. But any oven with a convention or broil option would work.  You just would need to adjust a cooking time depending on the oven you use.
  5. Cook skewers in a pre-heated to a 400F oven. Place skewers onto a metal rack. Make sure to put a larger size pan under the rack to collect juices dropping from chicken and bacon if you use a regular oven.
  6. Cook for 15 minutes from one side, then turn over each skewer and cook for another 10-15 minutes or until the bacon is crispy and chicken pieces are golden brown.

Done! You made it! Serve with fresh vegetables and enjoy!
