Quick and Easy Low-Fat Muffins

If you want to serve low-fat, yet delicious muffins for your breakfast or a tea /coffee table with your friends, this recipe would help. For this dessert, you need very simple ingredients. The preparation process is also very easy and quick. Since vegetable oil is used in the recipe, you will get low-fat muffins which have fewer calories compared to other recipes.

Ingredients:

  • 2 large eggs
  • 1/2 cup white (or brown) sugar
  • 2/3 cup milk
  • 2/3 cup vegetable oil (I use sunflower oil. You can use any light oil without flavor in this recipe.)
  • 1/2 tsp vanilla extract
  • 1 1/4 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 cup raisins or dried cranberry or dried cherries

Cooking Directions:

  1.  Preheat the oven to 355 F. Grease a standard 12-cup muffin tin with vegetable oil. You can also line the tin with paper liners.
  2. In a large bowl, mix well 2 eggs and sugar. Use a handheld mixer or whisk.  Do not overbeat. Just whisk to combine well.
  3. While whisking, slowly add milk, vegetable oil, and vanilla extract.
  4. Add presifted flour and baking powder. Mix well again. Then add raisins or dried cranberry or dried cherries. Mix with a spoon to combine.
  5. Pour the batter into the muffin tins and place into the preheated oven. Bake for 20 minutes or until golden.
  6. Remove from the oven and let the muffins cool down for at least 15 minutes.
