A warm salad with green beans, bell pepper, and chicken is the dish which very well serves needs for a light, yet fulfilling, healthy and delicious lunch or dinner. This is exactly what I want sometimes – not just a salad, but something warm and hearty. This recipe requires minimum ingredients which usually can be found in any fridge and also very simple and easy to make.
Ingredients:
- 2 chicken breasts (about 1 lb)
- 1 package frozen green beans (1 lb)
- 1 medium yellow onion
- 1 red bell pepper
- 4 Tbsp olive oil
- 1 tsp salt (or to taste)
- 1/2 tsp freshly ground black pepper
- 3 Tbsp balsamic vinegar
- 3 Tbsp hot water
Cooking Directions:
- Wash chicken fillets and pat them dry with paper towels. Cut them into thin strips and fry in a hot frying pan with 2 tablespoons of olive oil for 8-10 minutes or until done. At the end add to the chicken part of the reserved for the dish salt and black pepper.
- Boil the beans in salted water for a couple of minutes. The beans should be done al dente. Drain them and set aside.
- Peel the onion and pepper and cut them into thin strips. To the frying pan from meat, add one more tablespoon of olive oil and fry the onion and pepper for 2-3 minutes, add the beans and fry for about 5 minutes on a low heat until the vegetables are ready.
- Add the chicken to the vegetables, stir and transfer to a large serving bowl.
- In a small cup, whisk the ingredients for the sauce: balsamic vinegar and hot water, add some more salt and freshly ground black pepper to the taste. Pour the dressing onto the salad and mix well. Drizzle remaining 1 Tbsp of olive oil over the salad.
Serve warm as a main course for lunch or dinner. Bon appetite!
