Ingredients:
- 1/2 lbs ricotta cheese – you can buy it at a grocery store or make at home using this recipe
- 1/4 lbs butter – 1 stick (softened)
- 2 egg yolks (you can use remaining egg whites in this recipe)
- 1/2 cups sugar
- 1/4 tsp salt
- 1 tsp vanilla extract
- 2 1/2 cups all-purpose flour (sifted)
- 1 tsp baking powder
Cooking Directions:
- In a stand mixer bowl, combine ricotta cheese, butter, egg yolks, sugar, salt, and vanilla extract. Use the paddle to mix until uniform.
- Continue mixing with the paddle and gradually add the sifted flour with baking powder until all the ingredients are combined. Then transfer to a lightly floured work surface and knead the dough by hands for 1-2 minutes. You should get a soft and not sticky dough. The amount of flour may vary slightly depending on the moisture content of the cheese and the size of the yolks.
- Roll the dough 2-3 mm thick. With a round cookie cutter or a small glass, cut the rolled dough into circles about 2 inches in diameter.
- Now, take 4 circles and put each on top of another to overlap.
- Carefully twist the structure crosswise into a tight roll.
- Cut the roll with a sharp knife crosswise into two parts. Two roses are produced from one roll.
- Similarly, form the remaining cookies. Place them onto a cookie sheet covered with a silicone baking mat or parchment paper and bake in a pre-heated to 355F oven for 20-25 minutes or until golden.
- Warm “roses” can be sprinkled with powdered sugar. Done! Bon Appetit!
