Spiced Pear Pecan Muffins

These warm autumn days are full of flavors: morning fogs, fallen leaves, orchards… This time of the year really inspires to make something special with seasonal fruits and aromas. Recently, I baked Aromatic Bundt Cakes with Apples. Today, I would like to make Spiced Pear Pecan Muffins with a bouquet of different flavors which are coming from ripe pears, pecans, and spices. The muffins are tender, moist, healthy and delicious. I think these muffins are an ideal dessert for this season, and I hope you would agree with me once you try them.

 

Ingredients:

  • 1 cup all-purpose flour
  • 1/2 cup whole-wheat flour
  • 3/4 cup oldfashioned oats
  • 2 tsp baking powder
  • 1/4 tsp baking soda
  • 1/2 tsp cinnamon
  • 1/2 tsp ground ginger
  • 1/4 tsp nutmeg
  • 1/2 tsp salt
  • 2 large eggs (room temperature)
  • 2/3 cup sugar
  • 2 oz (1/2) stick melted butter
  • 1 cup buttermilk (room temperature)
  • 2 grated pears
  • 1/2 cup chopped pecans; plus several pecan halves to decorate each muffin

 

Cooking Directions:

It’s important for this recipe that all ingredients have room temperature. So, remove the eggs and buttermilk from the fridge in advance, at least two hours before you start working on the recipe.

  1. Preheat the oven to 350F.
  2. Mix and sift all dry ingredients: both flours, baking powder and soda, salt, and spices. Then add oldfashioned oats and mix again.
  3. In a large bowl, beat eggs with sugar using a hand whisk until just combined. Add melted and cooled down butter, whisk. Then add buttermilk and whisk again to combine.
  4. Grate pears using the medium holes grater side.
  5. Chop pecans using a sharp knife.
  6. Add dry ingredients to the bowl with wet ingredients. Mix with a spatula to combine. Add grated pears and chopped pecans. Mix again.
  7. Put paper liners into muffin tins. Pour the batter into tins up to the top of the liners. Place the pan into the preheated oven. Place a half of pecan on the top of each muffin to decorate.
  8. Bake for 30-35 minutes or until golden brown.
  9. Remove from the oven and let the muffins cool down for at least 15 minutes.
