Scones with Cranberries

Today I would like to share with you the recipe to prepare healthy, light, not too sweet, but delicious and very soft buns, which traditionally came from England, but known and loved everywhere – scones. We will not add eggs to the dough; and will use whole-grain flour to make it even more nutritious. Adding berries or pieces of fruits to the dough makes the scones even more healthy and delicious.

Ingredients:

  • 3/4 cups all-purpose flour
  • 1/2 cups whole-wheat flour
  • 2 Tbsp brown sugar
  • 2 tsp baking powder
  • zest of one lemon, finely grated
  • 2 1/2 oz cold butter
  • 2/3 cups cold milk
  • 5 oz cranberries (or blueberries or fruit pieces such as apples or pears)
  • additionally: 2 Tbsp milk and 2 Tbsp sugar to brush and sprinkle the scones

 

Cooking Directions:

  1. In a bowl, mix together all dry ingredients: both flours – pre-sifted, sugar, baking powder, lemon zest.
  2. Cut butter into small pieces and add to the mixture.
  3. Place everything into the bowl of food processor and pulse several times until you have a uniform and crumble mixture. Or mix the butter into the flour mixture with your hands creating small crumbs.
  4. Add berries and carefully mix in trying do not crush berries.
  5. Add cold milk and mix very carefully with a spatula.
  6. Shape the dough into a flat disk one inch thick. Cut diagonally into eight pieces.
  7. Place the scones onto a cookie sheet covered with a silicone baking mat or parchment paper and bake in a pre-heated to 400F oven for 30-35 minutes or until golden brown. They would rise a little bit.
  8. Remove from the oven and let scones cool down right on the baking sheet for about 15-20 minutes.

Prepare tea for yourself and enjoy!

If you do not eat all of them right away – which I doubt 🙂 – the scones will remain soft for two to three days.
