Oatmeal Cookies with Honey and Raisins

Oatmeal cookies seem to be famous across the world. I remember these cookies from my childhood. My mom often baked them and served with milk for breakfast. When I moved to the US, I was surprised how the oatmeal cookies are loved here.
I would like to share with you my variation of the oatmeal cookies recipe. I add some spices and honey to the dough which makes the cookies very flavorous.

Ingredients:

  • 2 sticks butter, softened
  • 1/4 cup sugar (brown is my first choice, but white is also good to use)
  • 1 egg
  • 2 Tbsp honey
  • 1 tsp vanilla extract
  • 1 cup all-purpose flour
  • 1 tsp baking powder
  • 1/2 tsp ground cinnamon
  • 1/8 tsp ground nutmeg
  • 1/4 tsp salt
  • zest of one orange, finely grated
  • 1 cup oldfashioned oats
  • 1/3 cup dark raisins

Cooking Directions:

  1. In a large bowl or a stand mixer bowl, cream together butter and sugar. Add an egg and mix well again. Stir in honey and vanilla extract.
  2. Add sifted flour mixed with baking powder, cinnamon, nutmeg, orange zest, and salt in small portions and mix well until smooth and creamy.
  3. Soak raisins in hot water for 5-10 minutes, then rinse and drain.
  4. Add oats and raisins. With a spatula or spoon, mix all together until combined.
  5. Cover with a plastic and put into a refrigerator for about an hour.
  6. Preheat the oven to 355F (180C). Place a silicone baking mat or parchment paper on a cookie sheet. Roll the dough into small balls about a walnut size, place on the sheet and flatten each ball from the top.
  7. Bake for 15 minutes or until golden brown. Remove baking sheet with cookies from the oven and let them cool for at least 10-15 minutes.

Serve with tea, coffee or milk. Enjoy!
