It is always good to make a ricotta cheese at home. It is fresh and delicious, and you are sure which ingredients you used. I make a ricotta cheese at home from buttermilk using a double boiler.
Directions:
- To make a double boiler, fill a large pot about 1/2 full with water and fit a glass bowl into the pot.
- Pour one quart of buttermilk into a bowl and place the double boiler pot on a high heat. Heat it until the water in the pot comes to a boil. Then reduce the heat to a medium, cover the bowl with a lid, and let the water in the pot simmer for 30 minutes.
- Turn the heat off and let it cool down completely.
- Drain the cheese through a cheesecloth for about one hour.
You can also collect the cheese liquid. It can be stored it in a fridge for several days and used later to cook delicious crepes.
Done! Your fresh ricotta cheese is ready! You can serve it for a breakfast with some jam or honey, or you can use it for baking.
The homemade ricotta cheese can be stored in a fridge in a covered container for up to one week. Just make sure you use fresh buttermilk.
Last time when I made a ricotta cheese, I had one and a half quarts of buttermilk, and it produced about one pound of the ricotta cheese.
