Want to make something delicious and aromatic, but simple for your family or friends? Then marinade chicken pieces – legs, thighs, breasts – in the delicious creamy Greek-style sauce and bake in the oven.
Ingredients:
- 4 lbs chicken pieces
- 1 cup plain Greek yogurt
- zest of one lemon, finely grated
- 2 Tbsp lemon juice
- 2 Tbsp olive oil
- 1/2 Tbsp dry oregano
- 1 tsp freshly ground black pepper, or to taste
- 1/4 cup fresh parsley, finely chopped
- 1 tsp salt, or to taste
- 2 cloves garlic, finely chopped or pressed
Cooking Directions:
- Wash and pat dry chicken pieces with paper towels.
- To prepare a marinade, mix the yogurt, olive oil, garlic, oregano, salt and black pepper. Add the grated lemon zest and lemon juice. Stir well and then add the chopped parsley.
- Place the chicken and marinade into a large plastic zip bag and close the bag, leaving no air in it. Shake the bag well to mix the marinade and chicken well, and leave it in the refrigerator for 30 minutes.
- Preheat the oven to 375F. Place the chicken in a baking pan and bake it for about an hour or until the skin is crispy, the juices run clear. An instant-read thermometer inserted near the bone should read 165F.
- Serve with mashed potato or rice and a fresh salad.
